National Banana Bread Day is February 23 (yep, there’s a day for that!), and we’re celebrating with these nutrient and protein-packed banana bread muffins. This recipe is naturally sweetened only with banana and loaded with protein, healthy fats, vitamins and minerals.
(Makes 12 muffins)
2 cups rolled oats
1½ cups almond flour
2 scoops INVIGOR8 French Vanilla Superfood Shake
1 tsp baking soda
½ tsp salt
2 cup mashed, ripe banana
6 tbsp coconut oil or butter, melted
2 tsp vanilla extract
Preheat oven to 350º F. Line a 12-cup muffin tin with muffin cups.
In a large bowl, whisk together the banana, coconut oil or butter, eggs and vanilla until smooth. Stir in the oats, almond flour, INVIGOR8 shake powder, baking soda and salt. Mix until combined.
Spoon batter into 12 muffin cups. Bake for 25 minutes, or until the tops start to turn golden brown.
Allow to cool completely before storing in an airtight container in the fridge.
