Our take on no bake cheesecake bites will satisfy your sweet tooth without blowing your diet plan. They're full of healthy fats and fiber plus nutrients from the INVIGOR8 powder. The dates provide quick energy, making them a good pre-workout snack option.
½ cup dates
½ cup walnuts
1 tsp vanilla extract
Pinch of salt
½ cup cashews, soaked overnight and drained
⅓ cup coconut milk
2 tbsp coconut oil
1 tbsp lemon juice
1 tbsp maple syrup
1 scoop French Vanilla INVIGOR8 Superfood Shake
Use a silicone muffin mold or line a standard muffin tin with six muffin cups.
In a blender or food processor, add the dates, walnuts, vanilla and salt. Pulse/blend until a sticky "dough’"forms. Divide the mixture between the six muffin molds and press down into a compact layer.
In the same blender/processor, add the cashews, coconut milk, coconut oil, lemon juice, maple syrup and INVIGOR8 powder. Blend until smooth, scraping down the sides as needed (this may take a few minutes).
Divide the cheesecake mixture between the six muffin molds. Top with frozen raspberries and lemon zest. Place in the freezer overnight or for at least 8 hours to solidify.
Let the cheesecakes sit at room temperature for 10-15 minutes to soften a bit before eating.
