Fresh Strawberry Muffins

A healthy alternative for a special breakfast treat. These delicious muffins are baked with fresh strawberries and are quick and easy to make. Your family will love them.

Recipe:
(Makes 12 muffins)

2 cups almond flour
2 scoops INVIGOR8 Strawberry Superfood Shake
2 tsp baking powder
¼ tsp salt
½ cup melted butter
2 tsp vanilla extract
2/3 cup chopped strawberries
4 eggs
¼ cup water

Preheat oven to 350º F. Line a 12-cup muffin tin with muffin cups.

In a large bowl, whisk together the butter, eggs and vanilla and water until smooth. Stir in the almond flour, INVIGOR8 shake mix, baking powder and salt. Mix until combined. Add chopped strawberries and mix gently.

Spoon batter into 12 muffin cups. Bake for 15 to 20 minutes, or until the tops start to turn golden brown. Sprinkle with organic powdered sugar and garnish with fresh strawberries.

Allow to cool completely before storing in an airtight container in the fridge.
