This bright green chia pudding breakfast is a clever way to start off your St. Paddy’s Day. It’s chock full veggies, protein and fiber to keep you nourished before a day of overindulgence!
Recipe: (Serves 2)
1½ cups unsweetened almond milk 1 cup packed spinach ½ cup chia seeds 1 scoop French Vanilla INVIGOR8 Superfood Shake 2 tbsp maple syrup (optional) 1 kiwi, sliced 1 banana, sliced Coconut flakes, for topping
In a high-speed blender, add the milk and spinach and blend on high until totally smooth. Pour into a bowl and whisk in the chia seeds, INVIGOR8 powder and maple syrup (if using). Whisk until thoroughly combined. Cover and place the bowl in the fridge overnight or for at least six hours to thicken.
Divide the chia pudding between two jars or bowls and top with kiwi, banana and coconut flakes.
