November is National Peanut Butter Lovers Month and we’re celebrating with a delicious, healthy peanutty granola recipe! Who said you couldn’t have dessert for breakfast? This peanut butter chocolate granola tastes like a crunchy Reese’s cup without all of the sugar and guilt.
(Makes about 3 cups)
⅓ cup coconut oil, melted
⅓ cup natural peanut butter
¼ cup honey
½ tsp vanilla extract
1½ cups rolled oats
½ cup coconut flakes
1 scoop French Vanilla INVIGOR8 Superfood Shake
½ tsp ground cinnamon
½ tsp salt
½ cup chocolate chips
½ cup roasted peanuts
Preheat the oven to 300º F. Line a baking sheet with parchment paper.
In a large bowl, whisk together the coconut oil, peanut butter, honey and vanilla extract until smooth. Add the oats, coconut flakes, INVIGOR8 powder, cinnamon and salt. Mix to thoroughly combine.
Transfer the granola to the baking sheet and spread out in one even layer. Bake for thirty minutes, tossing halfway through.
Allow to cool completely, then add the chocolate chips and peanuts. Store in an airtight container in the fridge.
