National Pumpkin Day is October 26, so why not whip up these seasonal chia pudding parfaits for a healthy breakfast, snack or even dessert? Yes, they're that good! (Don’t forget to make your chia pudding the night before.)
Recipe:
(Serves 2)
For the chia pudding:
1 cup unsweetened almond milk
½ cup plain yogurt
¼ cup chia seeds
1 scoop French Vanilla INVIGOR8 Superfood Shake
1 tbsp maple syrup, optional
For the pumpkin puree:
1 cup unsweetened pumpkin puree
¼ cup plain yogurt
1 tbsp maple syrup
1 tsp pumpkin pie spice
2 tbsp pumpkin seeds, optional
In a medium bowl, add all pudding ingredients. Whisk thoroughly to combine. Cover and place in the fridge overnight or for at least four hours to thicken. Stir occasionally to prevent clumping.
In a small bowl, stir together the pumpkin puree, yogurt, maple syrup and pumpkin pie spice.
In a small jar or glass, add ¼ cup of pumpkin puree followed by ¼ cup of chia pudding. Repeat these steps once more. Top with pumpkin seeds, if using.
Enjoy right away or cover and store in the fridge.
