Soft Gingerbread Cookies

These cookies are made without any refined sugar or flour and are loaded with healthy fats, fiber and protein. Try these for your next cookie swap or sweet treat.

(Makes 10 cookies) 

2 tbsp coconut oil, melted
2 tbsp blackstrap molasses
1 tbsp honey
1 egg
1 cup almond flour
¼ cup rolled oats
1 scoop French Vanilla INVIGOR8 Superfood Shake
1 tsp ground ginger
½ tsp ground cinnamon
½ tsp baking soda
¼ tsp salt 

In a large bowl, whisk together the coconut oil, molasses, honey and egg until smooth. Add the almond flour, oats, INVIGOR8 powder, ginger, cinnamon, baking soda and salt. Mix until thoroughly combined. Place in the fridge to chill for at least 20 minutes.

Use a tablespoon to scoop the dough onto a baking sheet, making sure cookies are 2 inches apart. Bake for 8 minutes. Allow to cool before storing in an airtight container in the fridge.
