Gluten Free Collagen Chocolate Mousse

About This Recipe
Chocolate mousse can be high in saturated fat and calories. Our version beefs up the protein with collagen peptides for a more balanced dessert. We also replaced some of the sugar with dates and the unhealthy fat for healthy monounsaturated fat from avocados.
Instructions
- Cover pitted dates with hot water to soften. Let soak about 5 minutes.
- Meanwhile, microwave chocolate chips in a microwave-safe bowl in 15-second intervals until completely melted.
- Place dates, the water they soaked in, melted chocolate and the remaining ingredients in a food processor fitted with blade attachment or high-speed blender and process until mixture is fluffy and smooth. Pause as needed to scrape the sides of the container with a spatula.
- Serve right away or store chocolate mousse in an airtight container in the refrigerator for one to two days.

- 4 medjool dates, pitted
- ¼ cup dark chocolate chips, melted
- ¼ cup unsweetened cocoa powder
- 1 tsp pure vanilla extract
- 2 medium avocados, pitted and peeled
- ¼ cup hot water
- Pinch sea salt
