Bananas and peanut butter are one of our favorite combos. Imagine frozen, creamy bananas with a thick, crunchy peanut butter coating and a texture like ice cream.
Recipe:
(Makes 15-20 bites)
½ cup natural peanut butter
2 tbsp coconut oil, melted
1 scoop French Vanilla INVIGOR8 Superfood Shake
¼ tsp salt (if using unsalted peanut butter)
2 bananas, sliced ½-inch thick
¼ cup chopped peanuts
Line a plate or small pan with parchment paper.
In a small bowl, mix together the peanut butter, coconut oil, INVIGOR8 powder and salt (if using). Stir until smooth.
Add a few banana slices to the bowl and gently mix to coat them all over. Place them on the parchment paper and repeat until all of the banana or peanut butter coating is gone. Top with chopped peanuts. Place in the freezer for at least one hour.
Store in an airtight container in the freezer.
