Gluten Free Himalayan Salted Caramel Banana 'Nice' Cream

About This Recipe
“Nice” cream is usually a healthier version of ice cream made with just bananas. Our recipe adds a few ingredients to give it a salted caramel flavor with no added sugar. A little bit of collagen protein helps increase the nutrient content and keeps you satisfied after enjoying this tasty treat.
Instructions
- Peel bananas and slice into rounds. Spread banana slices on a parchment-lined baking sheet and place in the freezer until frozen solid, about 4 hours or overnight.
- Place dates and almond milk in a food processor fitted with blade attachment and process until dates are finely chopped and mixture begins to turn creamy. Pause several times to scrape sides of the bowl with a spatula.
- Add sea salt, Invigor8 Salted Caramel Superfood shake powder, collagen and frozen banana slices to the food processor. Process again until bananas become smooth and creamy.
- Best if served immediately, but can also be transferred to a freezer-safe storage container and stored in the freezer for several hours or up to 1 day to get a firmer consistency. The bananas will start to brown if stored longer.

Ingredients
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
2 eggs, at room temperature
2 scoops of French Vanilla INVIGOR8 Superfood Shake powder
1 1/2 cup spouted whole wheat flour
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
3 large ripe bananas
1 tsp vanilla extract
2 Tbs chia seeds
2 Tbs ground flax seeds
2 Tbs rolled oats, for topping
Instructions
- Preheat oven to 350 degrees.In a bowl, cream the butter and sugar together.
- Add eggs and combine throughly. In a seperate bowl, place the peeled bananas and vanilla extract and mash with a fork.

- Go gluten free by exchange out with gluten free flour of your choice!
- Recipe makes approximately 20 muffins. (Bake 18-20 minutes)
