March 26 is National Waffle Day, so if you've been waffling about eating healthy vs. eating what you crave, take this opportunity to try our nutritious and delicious waffles. Packed with protein and fiber, they're made with oats and almond flour and have no added sugar (except for maple syrup topping!).
(Makes 4 waffles)
1 cup rolled oats
½ cup almond flour
2 scoops French Vanilla INVIGOR8 Superfood Shake
1 tsp baking powder
½ tsp salt
1 cup unsweetened almond milk
2 tbsp coconut oil or butter, melted
1 tsp vanilla extract
½ cup chocolate chips
Maple syrup, for serving
In a high-speed blender, add the oats, almond flour, INVIGOR8 powder, baking powder and salt. Pulse to combine and to break up the oats a bit.
Add the almond milk, coconut oil or butter, eggs and vanilla extract. Blend until smooth, scraping down the sides and under the blade as needed. Stir in the chocolate chips.
Heat waffle iron and pour in about ⅓ cup of batter. (The exact amount will depend on how large your waffle iron is). Close the iron and remove when golden brown and crispy. Repeat until the batter is gone.
Serve topped with additional chocolate chips and maple syrup.
