Grab a couple of these cookies on busy mornings for a convenient breakfast. Don’t expect any blood sugar spikes with these scrumptious high-protein, high-fiber bites. They are sweetened naturally with grated apple, dried cranberries and INVIGOR8 shake powder.

Recipe
(Makes 15)

1 cup grated apple
3 tbsp coconut oil, melted
1 tsp vanilla extract
1 egg
1 cup rolled oats
¼ cup almond flour
¼ cup chopped walnuts
¼ cup chopped dried cranberries
1 scoop French Vanilla INVIGOR8 Superfood Shake
2 tsp cinnamon
½ tsp baking soda
¼ tsp salt

Preheat the oven to 350º F. Line a baking sheet with parchment paper.

In a large bowl, whisk together the apple, coconut oil, vanilla and egg.

To the same bowl, add the remaining ingredients.

Scoop the batter onto the baking sheet into heaping tablespoon-sized balls. Flatten slightly using wet hands to prevent sticking. Bake for 15 minutes or until golden brown on the bottoms.

Allow to cool. Store in an airtight container.
