These cookies are great for those following a gluten-free or grain-free diet. The coconut flavor complements the almond flour nicely to create a scrumptious cookie. Collagen peptides add some protein to the mix, without changing the coconut flavor.
Recipe: (Makes 16 cookies)
Parchment paper 1 cup almond flour 1 cup unsweetened, flaked coconut Pinch sea salt ½ cup coconut sugar 1 large egg 2 tbsp coconut oil, melted ½ tsp baking powder ½ tsp pure vanilla extract 2 scoops INVIGOR8 Collagen Peptides
Preheat the oven to 350º F.
Line a baking sheet with parchment paper and set aside.
Place all ingredients in the bowl of a food processor fitted with blade attachment and process until coconut is finely shredded and a ball of dough begins to form. If the mixture is too thick, add 1 tablespoon of water at a time until dough comes together.
Use a tablespoon or cookie scoop to form dough into 2-inch balls. Place cookies several inches apart on the baking sheet.
Bake for 12-14 minutes or until bottoms of cookies begin to brown. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling.
Store cookies in an airtight container at room temperature.
