This make-ahead breakfast or snack is loaded with healthy fats, protein and fiber to keep you energized until lunchtime. The beauty of this recipe is that you can use any fruit you have on hand. Top it with nuts, seeds, granola, nut butters or fresh fruit. The options are endless!
In a high speed blender, blend the strawberries and almond milk until mostly smooth with some chunks.
Pour into a medium bowl or large mason jar. Stir in the chia seeds and INVIGOR8 shake powder until there are no clumps. Cover and refrigerate for at least 2 hours or overnight.
When ready to eat, stir the chia pudding again to make sure no clumps remain. Enjoy with a drizzle of maple syrup for sweetness and fresh strawberries.
