Gluten Free & KETO Healthy Peanut Butter Fudge

About This Recipe
You would never guess that this indulgent fudge was healthy. It has a secret ingredient that makes it extra luscious and creamy: avocado! You may have just found your new favorite guilt-free dessert.
Instructions
- In a food processor, add the avocado, peanut butter and coconut oil. Process until smooth. Add the INVIGOR8 powder and salt and pulse to incorporate.
- Add the melted chocolate and pulse until just combined, making sure not to overmix.
- Grease a loaf pan and line it with parchment paper. Transfer the fudge to the loaf pan and press into an even ½-inch thick rectangle. Sprinkle with peanuts and gently press them down into the fudge so they stick.
- Chill in the fridge or freezer until firm, about 1 hour. Slice into 8 large or smaller squares if desired. Store in an airtight container in the fridge.
Variations - more calories or less
- Go gluten free by exchange out with gluten free flour of your choice!
- Recipe makes approximately 20 muffins. (Bake 18-20 minutes)

2 eggs, at room temperature
2 scoops of French Vanilla INVIGOR8 Superfood Shake powder
1 1/2 cup spouted whole wheat flour
1 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
3 large ripe bananas
1 tsp vanilla extract
2 Tbs chia seeds
2 Tbs ground flax seeds
2 Tbs rolled oats, for topping

- ½ ripe avocado
- ⅓ cup natural peanut butter
- 1 tbsp coconut oil, melted

- ½ cup dark chocolate chips, melted
- ¼ cup peanuts, chopped roasted
