Healthy Peanut Butter Fudge

You would never guess that this indulgent fudge was healthy. It has a secret ingredient that makes it extra luscious and creamy: avocado! You may have just found your new favorite guilt-free dessert.

Recipe:
(Makes 8)

½ ripe avocado
⅓ cup natural peanut butter
1 tbsp coconut oil, melted
1 scoop Triple Chocolate Brownie INVIGOR8 Superfood Shake
½ tsp salt
½ cup dark chocolate chips, melted
¼ cup peanuts, chopped

In a food processor, add the avocado, peanut butter and coconut oil. Process until smooth. Add the INVIGOR8 powder and salt and pulse to incorporate.

Add the melted chocolate and pulse until just combined, making sure not to overmix.

Grease a loaf pan and line it with parchment paper. Transfer the fudge to the loaf pan and press into an even ½-inch thick rectangle. Sprinkle with peanuts and gently press them down into the fudge so they stick.

Chill in the fridge or freezer until firm, about 1 hour. Slice into large or small squares. Store in an airtight container in the fridge.
