Love ginger ale, but don’t like the calories? This lemon ginger seltzer uses fresh ginger to perk up the taste and nutrition, while keeping the calories low. Flavorless collagen peptides boost the protein content, making this a satisfying drink that helps you stay full.

Instructions

  • Place ginger root, lemon juice, honey and water in a small saucepan. 
  • Set over medium-high heat and cook until mixture begins to boil. Reduce heat to medium-low and let simmer until mixture thickens and is reduced by half, about 10-15 minutes. 
  • Remove ginger mixture from heat and strain, pressing on solids. Stir collagen into the remaining mixture. Let cool to room temperature.
  • To serve: Fill a glass with ice. Add 1 tbsp ginger simple syrup base and 1 cup of sparkling water. Garnish with lemon slice, if desired.

  • 2 tbsp fresh ginger root, peeled and chopped
  • ¼ cup fresh lemon juice
  • ¼ cup honey
  • ¼ cup water
