Gluten Free Mint Chocolate Collagen Brownies

Instructions
- Preheat the oven to 350º F.
- In a medium bowl, whisk together almond flour, baking powder, salt and collagen powder.
- In a separate bowl, beat eggs. Add avocado oil to the eggs, then whisk in the coconut sugar.
- Stir in almond butter, cocoa powder and peppermint and vanilla extracts to the egg mixture.
- Add the almond flour mixture to the wet ingredients, mixing until just combined. Stir in chocolate chips.
- Pour batter into a greased 8”x8” baking pan and bake for 40 to 45 minutes, or until a toothpick inserted in the center of the brownies comes out clean.
- Let cool for 10 minutes, then slice into 16 squares.
