Gluten Free Peanut Butter Chocolate Chip Granola

November is National Peanut Butter Lovers Month and we’re celebrating with a delicious, healthy peanutty granola recipe! Who said you couldn’t have dessert for breakfast? This peanut butter chocolate granola tastes like a crunchy Reese’s cup without all of the sugar and guilt.
Instructions
- Preheat the oven to 300º F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the coconut oil, peanut butter, honey and vanilla extract until smooth. Add the oats, coconut flakes, INVIGOR8 powder, cinnamon and salt. Mix to thoroughly combine.
- Transfer the granola to the baking sheet and spread out in one even layer. Bake for thirty minutes, tossing halfway through.
- Allow to cool completely, then add the chocolate chips and peanuts. Store in an airtight container in the fridge.
