Gluten Free Pumpkin Spice Chia Pudding Parfait

National Pumpkin Day is October 26, so why not whip up these seasonal chia pudding parfaits for a healthy breakfast, snack or even dessert? Yes, they're that good! (Don’t forget to make your chia pudding the night before.)
Instructions
- In a medium bowl, add all pudding ingredients. Whisk thoroughly to combine. Cover and place in the fridge overnight or for at least four hours to thicken. Stir occasionally to prevent clumping.
- In a small bowl, stir together the pumpkin puree, yogurt, maple syrup and pumpkin pie spice.
- In a small jar or glass, add ¼ cup of pumpkin puree followed by ¼ cup of chia pudding. Repeat these steps once more. Top with pumpkin seeds, if using.
- Enjoy right away or cover and store in the fridge.
