Looking for a healthier alternative to fudge? Why not try these PB fudge bites with all the flavor but much less sugar and keto friendly. Collagen peptides add a dose of protein without changing the luscious peanut butter flavor.
Instructions
- Place peanut butter and coconut oil in a medium saucepan and set over medium-low heat. Warm until both ingredients are melted. Stir to combine and remove from heat.
- Add maple syrup, vanilla, oat flour, and collagen to the peanut butter mixture. Stir until a ball forms.
- Transfer mixture to loaf pan and spread it into an even layer with a spatula. Refrigerate until firm, about 2 hours.
- Use parchment paper to help you remove the fudge from the pan. Use a knife to cut the fudge in half, and then into 1-inch pieces.
- Store in an airtight container or storage bag in the refrigerator.

- 1 cup natural creamy peanut butter
- 2 tbsp coconut oil
- ¼ cup pure maple syrup
- ½ tsp pure vanilla extract
- ½ cup oat flour (Grind ½ cup rolled oats in blender or food processor.)
