Gluten Free Sparkling Blueberry Lemonade

About This Recipe
Our low-calorie blueberry lemonade is the perfect refreshing beverage for a hot summer day. The collagen peptides are completely tasteless, so they won’t change the flavor of this delicious beverage. They also add protein to the mix to help keep you full between meals.
Instructions
- Place blueberries in a small saucepan with water, sugar and the lemon zest. Set over medium-high heat and cook until mixture begins to boil. Reduce to medium-low heat and let simmer until blueberries burst and mixture thickens, about 10-15 minutes.
- Remove blueberry mixture from heat and strain, pressing on solids.
- Stir in collagen. Let cool to room temperature.
- To serve: Place 2 tablespoons of blueberry syrup into each glass. Add the juice of ¼ to ½ lemon, depending on how tart you want your drink. Fill glasses with ice and top each glass with 1 cup of sparkling water. Garnish with whole blueberries, if desired.
