Who doesn’t love brownies? These high-protein minty brownies with collagen peptides are a healthier version of everyone’s favorite dessert. Adding a bit of protein to the brownies helps balance out the sugar so you don’t have an energy crash a few hours later.
(Makes 16 brownies)
1½ cups almond flour
1 tsp baking powder
Pinch of sea salt
4 scoops INVIGOR8 Collagen Peptides
2 large eggs
⅓ cup avocado oil
¾ cup coconut sugar
½ cup almond butter
¾ cup cocoa powder
2 tsp peppermint extract
1 tsp pure vanilla extract
½ cup dark chocolate chips
Preheat the oven to 350º F.
In a medium bowl, whisk together almond flour, baking powder, salt and collagen powder.
In a separate bowl, beat eggs. Add avocado oil to the eggs, then whisk in the coconut sugar.
Stir in almond butter, cocoa powder and peppermint and vanilla extracts to the egg mixture.
Add the almond flour mixture to the wet ingredients, mixing until just combined. Stir in chocolate chips.
Pour batter into a greased 8”x8” baking pan and bake for 40 to 45 minutes, or until a toothpick inserted in the center of the brownies comes out clean.
Let cool for 10 minutes, then slice into 16 squares.
