August 4 is National Chocolate Chip Cookie Day, and what better way to celebrate than with this updated INVIGOR8 version of the most classic recipe. We ditch the refined sugars and flours and opt for mineral-rich coconut sugar and fiber-rich oat and almond flour.

(Makes 10 cookies)
6 tbsp coconut oil, melted
3 tbsp coconut sugar
1 tsp vanilla
⅓ cup oat flour
⅓ cup almond flour
1 scoop French Vanilla INVIGOR8 Superfood Shake
1 tsp baking soda
¼ tsp salt
¼ cup dark chocolate chips
Preheat the oven to 350º F. Line a baking sheet with parchment paper.
In a large bowl, whisk together the coconut oil, coconut sugar, vanilla and egg until smooth. Add the oat flour, almond flour, INVIGOR8 shake powder, baking soda and salt. Mix until everything is incorporated and smooth. Stir in the chocolate chips.
Bake for 8 minutes, or until the edges start to turn golden brown. Allow cookies to cool completely before transferring to a container or plate.
