Looking for a healthier alternative to fudge? Why not try these PB fudge bites with all the flavor but much less sugar. Collagen peptides add a dose of protein without changing the luscious peanut butter flavor.
(Makes 16 pieces)
1 cup natural creamy peanut butter
2 tbsp coconut oil
¼ cup pure maple syrup
½ tsp pure vanilla extract
½ cup oat flour (Grind ½ cup rolled oats in blender or food processor.)
2 scoops INVIGOR8 Collagen Peptides
Line a loaf pan with parchment paper letting some paper hang over the pan edges and set aside.
Place peanut butter and coconut oil in a medium saucepan and set over medium-low heat. Warm until both ingredients are melted. Stir to combine and remove from heat.
Add maple syrup, vanilla, oat flour, and collagen to the peanut butter mixture. Stir until a ball forms.
Transfer mixture to loaf pan and spread it into an even layer with a spatula. Refrigerate until firm, about 2 hours.
Use parchment paper to help you remove the fudge from the pan. Use a knife to cut the fudge in half, and then into 1-inch pieces.
Store in an airtight container or storage bag in the refrigerator.
